What information does RASA need for a catering proposal?
Share the date, venue, occasion, meal timings, estimated guests and preferred cuisines. Include vegetarian, Jain, allergy and other dietary requirements. Venue kitchen access and service format affect staffing and equipment as much as the menu does.
How should we compare per-plate catering quotes?
Use the same menu, guest guarantee and service format. Check whether staffing, crockery, counters, kitchen equipment, transport, drinking water and cleanup are included. Ask for taxes and overtime terms in writing; the lowest headline plate rate may exclude essential service costs.
What should we check at a tasting?
Taste the dishes you are likely to order, including a staple, a live-counter item and dietary alternatives. Discuss how texture and temperature will be maintained at scale. Record agreed changes and substitutions against the final menu; a tasting does not by itself establish the service plan.
How do we manage uncertain guest numbers?
Agree on the minimum guaranteed count, the final confirmation deadline and how extra guests will be charged. Separate meal-wise attendance from the invitation count. Children, supplier meals and late arrivals should be addressed explicitly in the order.
Can a menu safely accommodate allergies?
Tell the team the exact allergy and severity before choosing dishes. Ask about ingredients, preparation areas, utensils and cross-contact controls. A vegetarian or Jain label does not establish allergy safety; confirm whether the required controls can actually be provided.
